Thanksgiving isn't complete without sweet potatoes topped with marshmallows in your life. Here's my favorite recipe, including a punch of coconut flavor.
INGREDIENTS
- 3 pounds of sweet potatoes
- 1 tablespoon of brown sugar
- 1 tablespoon butter
- 1 tablespoon coconut oil
- 1 teaspoon of sea salt
- 1 cup shredded coconut
- 1 1/2 cup marshmallows
DIRECTIONS
1. Preheat oven to 425. Prick the sweet potatoes with a fork and place on a baking sheet. Bake for a hour or until tender. Take the potatoes out of the oven when finished and set aside.
2. Change the oven temperature to 350 degrees. Spread a layer or coconut oil on the 9x13 inch casserole dish.
3. Peel cooked potatoes and place in medium pan on low heat. Mash with a fork or potato masher until creamy and smooth. Add brown sugar, butter, salt.
4. Spoon the potato mixture into the casserole dish.
5. Make the crumble in a separate bowl, combine coconut, butter, brown sugar and flour and mix until the consistency is crumbly. Top the potatoes evenly with the crumble and finish off with a generous layer of the marshmallows. (you can't add too many marshmallows!) Bake for 30 minutes or until the tops of the marshmallows are golden brown.
